Oregano Chicken Pasta in Creamy Tomato Sauce

Ingredients
  

  • 200 g Pasta
  • 1 Chicken Breast
  • 1/2 cup Cherry Tomatoes
  • 2 Tomatoes
  • 1 tbsp Tomato Paste
  • 1 cup Mala / Buttermilk
  • 1 tsp Oregano
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Chili Flakes Optional
  • 1/2 tsp Black Pepper
  • 2 Onions
  • 2 tbsp Garlic Paste
  • Dhania
  • Grated Mozarella
  • Salt

Chicken Marinade Dry Rub

  • 1 tsp Oregano
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Black Pepper
  • 1/2 tsp Chili Flakes Optional

Instructions
 

Pasta

  • Boil a large amount of salted water for your pasta and cook it al dente according to package instructions.

Chicken

  • Rub the chicken breast with the dry rub and set it aside for 15 minutes.
  • Pan fry the chicken breast for 5 minutes on each side and set aside to rest.

Creamy Tomato Sauce

  • Fry onions, dhania stalks and garlic until fragrant.
  • Add tomatoes and tomato paste, cook until the tomatoes soften.
  • Add mala, oregano, cumin, coriander, chilli flakes, black pepper, salt and cherry tomatoes.
    Let it cook for 3 minutes.
  • Meanwhile, cut the chicken breast in half and cut one half into small strips/cubes. Add in the tomato sauce.
  • Add the pasta and mix it well. Garnish with dhania leaves and serve with the remaining chicken breast.
    Add a huge helping of the mozarella cheese as you serve.
