The best mashed potatoes are those that are creamy, light, buttery and fluffy. I have had lots of lumpy mashed potatoes in my life and it put me off when it came to eating mashed foods. Incase you don’t have a potato masher, another alternative but will take lots of arm strength, is boiling the potatoes until they are very soft, mash them with a mwiko then use a sieve, NO LUMPS at all! TIP: Use as much cheese as possible, it makes the dish creamier.
Bacon & Cheddar Mashed Potatoes
Boil the potatoes for 20 minutes, ensure they are soft and well cooked.
Mash the potatoes.
Fry the bacon for 7 minutes and set it aside.
Put the mashed potatoes back on low heat, add milk, butter, cheddar cheese, bacon , black pepper and salt.
When serving, top the mashed potatoes with more cheese, bacon and dhania stalks.
Tip: If you do not have a potato masher, first mash the potatoes using a mwiko and then use a sieve to make sure there are no lumps.
